Need any rain???

It has rained and rained and rained.... for days. Fay keeps coming around and hiking up her skirt. We soo needed it though. Thanks Fay : )
Not too much to blog about in the last few days.
I did make this for dinner the other night. It was soo good.
We had Baked Spaghetti, Asian Slaw and homemade peanut butter cookies.




Check out the sunflower seeds. It is really
a great salad that will compliment so many things.

And yes, I covered up the UA logo on the plate....

four more days!!!!

These were the easiest cookies. They took no time.

Peanut Butter Cookies

1cup peanut butter

1cup sugar

1tsp. vanilla extract

1 egg <>

Mix and form into balls about an inch in size. Put on pan a couple of inches apart.

mash each way with a fork. Cook @ 325 for 8 to 10 minutes. Cool on pan for about

a minute and then transfer to wire rack. Makes about 24 cookies.


Now we have Gustov headed to the Gulf.... Lookout Manascos.
We always keep you in our prayers.... but say an extra one when Mother Nature decides to see how strong your house and your Faith are.

It's that time again....



Cooking on Brentwood Drive



Today we are making an old stand by comfort food.
At least it is in our house.
Sunshine in a bowl....otherwise known as Pimento Cheese.
Now, I have my Mom's recipe. And I sort of go by that... but I tweak it a bit for us.
I will add her recipe at the end of this post.


Here are the usual suspects: Shredded Cheese, Mayonnaise, Paprika and Pimentos. Now in Mom's recipe she adds some Tabasco. You can too, if you want. I'm just not a big fan of sweating while I enjoy my sunshine on a Triscuit.




I chose sharp, but you can actually change it up and use whatever your little tastes buds are a screamin for. If you want it a bit warm, grab a block or bag of jalapeno cheese. You can use Swiss or Colby-jack. Check the fridge and maybe there is a bit of each. Go out there on that limb and try it this time.... Go ahead... scoot.






So, that was bag of shredded cheese. If you want it to have more of that store bought texture. I would try the crumbles in a bag. That would probably work very well. Then pour the pimentos on top, juice and all.



The paprika....there is no exact science to the paprika. Or the Mayo for that matter. I do about three heaping tablespoons of mayo. If you don't want yours very creamy, go with less.

This picture shows two Heaping tablespoons, but I added more because I like it a bit more creamy.


Now here we are at the moment of truth. The perfect bite. Now while I enjoy a good crisp Triscuit under my sunshine. There are others that work very well. I have been known to go with a Wheat Thin, I find them to be very enjoyable. And a Ritz? Well we all know that "Every thing's Better when it's sitting on a Ritz". Right? So go with what you like. You don't want to be unhappy with the cracker... that would most definitely take away from the sunshine.





Now that's the way I like it.


So, go ahead and get you a nice cold glass of tea....or Diet Dr. Pepper, or the beverage of your choice and have you a sit down with the above aforementioned bowl of sunshine and the crispy foundation you must have to hold it up.... and go forth and enjoy!


Mom's recipe

1lb. or less cheddar cheese (mixed cheeses of choice)
1 lg. jar of pimentos w/juice
Paprika to taste
1 shot of Tabasco (to enhance, not to taste) Yes, that is what it says..
Enough mayonnaise to make it creamy
mix thoroughly and chill

It is a little bit vague. And I don't make as much as she does at one time so just play as you go and remember-- you can add, but you can't take away!

Time For......

CHILI!!


So, it snowed on Saturday here in the South. (Hence, the new picture at the top, thank you very much). It was very cold and going to be very wet for the next few days so I decided to make a big ol potta chili!

And, since I can at least download a few pics at a time, I took pictures as I made it. So, if you are so inclined...as opposed to reclining in the chair, please join me for a hot bowl of chili.




These are your ingredients: 1 to 2 pounds of ground chuck, 2 large cans of crushed tomatoes, 1 pack of chili seasoning mix. I also have my Mom's recipe that I follow loosely, via the worn out red cookbook open in the front. There are also two cans of chili beans (these are medium because there are two smaller mouths that love chili), and one can of pintos. Mom's calls for kidney beans too. They are just not my favorite. My grandmother's big ol pot is on the far left. Oh yea, you have to have your favorite beverage too. My beverage of choice would be Diet Dr. Pepper......always : )

OK.... now the fun begins. I cook my ground chuck in the microwave. Less mess to clean up and I can drain almost all the fat off as it cooks. (notice: gratuitous shot of glass of DDP)




My onion nicely diced on the counter. On the counter so I can be sure and get all the bacteria in it as possible : ) (just kidding!)


This would be my grandmother's big ol pot. the ground beef and onions are on the bottom and the chili mix is on top. Let this be warming up on at least medium to medium high while you open the cans of crushed tomatoes.




Add your two cans of tomatoes. Stir well.
Now then. According to my Mom, this step is very important. You are supposed to drain half the liquid from your beans........... I don't know. I guess it adds too much liquid to the chili? But honestly, it is not that much. I do it anyway, I'm afraid if I don't, somehow my Mom will know and she will get in the car and drive all the way over here from AL and scold me......



Now it is all in the pot. Stir it well and let it come to a boil and turn it down to a simmer.



Cover and let it cook for at least an hour..... Mom's recipe says 2 hours. We usually can't wait that long. Also, taste test it after about thirty minutes to see if more chili powder might need to be added. Notice the strategically placed drink on the left side..... never out of reach. humm.... my coozie is too light. I need a DDP.. Be right back.

This is the way most of my immediate family eats chili.... with corn chips cheese on the bottom. The way Sonic did it back in the day. Yes, I know one of the bags is open upside down. I have opened chips of all kinds, large and small bags, this way since high school. My friend Kelley, back in the day, did this and said, at the time what was one of the most prolific statements ever. (you have to remember it was high school). "You have to open it from the bottom so all the spices and salt will go back through as you eat them and you will have big chips when you get to the bottom"...... Genius. See? There you have it. I mean how can you argue with that? Makes perfect sense. And just because through the years my Mom, and others have picked up the bag the "wrong" way and strewn chips all over the floor. I will not stop trying to change the way America... no wait, the world eats their chips!(with my hand in the air, index finger pointing upward)............. Ahem.... going ahead with the assembly of the dish.


First, the chips in the bottom of a nice medium size bowl.


Then you must add the cheese broken or cut up into pieces that melt nicely. You have to have strategically placed for the perfect bite. Every. Time.



Now the crowning glory. You ladle a couple of nice spoons full of chili over the top. Let it sit for just a minute. Not too long because you don't want your chips to get mucky. Now get you a DDP or big ol glass of sweet tea or your beverage if choice. And by all means.........En-Joy!
